Juice separation when freezing

Hi all, i have experience one… i made juice only by order, i made every saturday and delivery to customer directly. and one of my customer asked me to delivery on sunday evening. so, i freeze the juice to keep it fresh. then after the delivery, my customer said that the juice seperate and it has small particle, even after she shaked the bootle, it didn’t combine together. is there any answer, what wrong is that?

Hello @Vinsens_Sandy, This is typical when you freeze and thaw juice, When you freeze juice the water content expands, which weakens the cellular structure, then when thawed goes back down, Nothing wrong with the juice but not only will this lead to separation, it will also give a slightly more mellow slightly diluted flavor than before.
