Açaí bowls- how do you prep them?

For those that also serve açaí bowls how do you prepare them? Currently we mix the purée packets with bananas and blend batches at a time. they sell so quickly though so I’m thinking if a soft serve/sorbet machine could work that would be much more efficient. Any ideas?

We use BlendTec Twister Jars to get it very thick with only a few ounces of liquid.

Hello Casscerasuolo, actually soft serve machine sounds like a great idea. I have tried one in a vegan café, and they used it for protein ice cream and other things.
Though it’s not a first-hand experience, as you may realize - being a guest in a friend’s café is nothing comparing to business. So if you or anybody else tried this setup, actually, I’d like to hear more.

At home we have only tried pre-mixed batches (using a regular home blender) then loaded to the sorbet machine. Results were decent. I believe you won’t have any problems with the texture.

We made the switch to acai sorbet a year ago and we will never go back. The packets take too much time and you get an inconsistent product. There are several choices for scoop able acai, may are cost effective.

I like the texture that the frozen açaí packets provide, but the powder is more convenient since you don’t need to thaw the packets. I haven’t done a side by side on price yet. I am always curious of what type of nutritional value is still present in both types of product. As for the purée, I haven’t seen one without added sugar yet.

We use Tropical Sorbet in the 2.6 gallon. It’s fast and tasty.
